Ingredients:
- 12 oz (340 g) spaghetti or your preferred pasta
- 2 tablespoons olive oil (30 ml)
- 4 cups fresh tomatoes, diced (about 6-8 medium tomatoes)
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 1 cup fresh basil leaves, torn
- Grated Parmesan cheese (optional), for serving
Instructions:
- Boil salted water in a large pot.
- Add pasta and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant (about 1 minute).
- Stir in diced tomatoes, salt, and pepper.
- Cook until the tomatoes soften and release juices (approximately 5-7 minutes).
- Add the drained pasta to the skillet with tomato sauce.
- Toss to combine, adding reserved pasta water as needed to achieve desired consistency.
- Stir in torn basil leaves.
- Taste and adjust seasoning if necessary.
- Plate and top with grated Parmesan cheese, if desired.
