Ingredients:

  • 12 oz (340 g) spaghetti or your preferred pasta
  • 2 tablespoons olive oil (30 ml)
  • 4 cups fresh tomatoes, diced (about 6-8 medium tomatoes)
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 cup fresh basil leaves, torn
  • Grated Parmesan cheese (optional), for serving

Instructions:

  1. Boil salted water in a large pot.
  2. Add pasta and cook according to package instructions until al dente.
  3. Reserve 1 cup of pasta water before draining.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add minced garlic and sauté until fragrant (about 1 minute).
  6. Stir in diced tomatoes, salt, and pepper.
  7. Cook until the tomatoes soften and release juices (approximately 5-7 minutes).
  8. Add the drained pasta to the skillet with tomato sauce.
  9. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.
  10. Stir in torn basil leaves.
  11. Taste and adjust seasoning if necessary.
  12. Plate and top with grated Parmesan cheese, if desired.
