Ingredients:
- 5 oz spring mix
- 1 cup cherry tomatoes, halved
- ½ cup sliced cucumber
- ¼ cup thinly sliced red onion
- ¼ cup crumbled feta cheese
- ¼ cup toasted nuts
- 1 avocado, sliced
- 2 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp honey
- ½ tsp Dijon mustard
- Salt and freshly ground black pepper
Instructions:
- Rinse the spring mix thoroughly in cold water and dry using a salad spinner or paper towels.
- Halve the cherry tomatoes. Slice cucumbers, red onions, and avocado as desired.
- In a large bowl, combine the spring mix, cherry tomatoes, cucumbers, red onion, and avocado. Toss gently to combine.
- In a small bowl or jar, whisk together lemon juice, honey, Dijon mustard, salt, and pepper. Slowly add olive oil while whisking until emulsified.
- Pour the vinaigrette over the salad and toss gently until evenly coated. Top with crumbled feta and toasted nuts.
- Serve immediately, garnished with extra nuts or herbs if desired.
