Ingredients:

  • 5 oz spring mix
  • 1 cup cherry tomatoes, halved
  • ½ cup sliced cucumber
  • ¼ cup thinly sliced red onion
  • ¼ cup crumbled feta cheese
  • ¼ cup toasted nuts
  • 1 avocado, sliced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • Salt and freshly ground black pepper

Instructions:

  1. Rinse the spring mix thoroughly in cold water and dry using a salad spinner or paper towels.
  2. Halve the cherry tomatoes. Slice cucumbers, red onions, and avocado as desired.
  3. In a large bowl, combine the spring mix, cherry tomatoes, cucumbers, red onion, and avocado. Toss gently to combine.
  4. In a small bowl or jar, whisk together lemon juice, honey, Dijon mustard, salt, and pepper. Slowly add olive oil while whisking until emulsified.
  5. Pour the vinaigrette over the salad and toss gently until evenly coated. Top with crumbled feta and toasted nuts.
  6. Serve immediately, garnished with extra nuts or herbs if desired.
