Ingredients:
- 2 tablespoons olive oil
- 3 large yellow onions, thinly sliced
- 1 teaspoon granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme leaves, chopped
- 1 baguette, sliced into 1/2-inch thick rounds
- 2 tablespoons olive oil
- 4 ounces Gruyère cheese, shredded
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat olive oil in a large skillet or Dutch oven over medium-low heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are deeply golden brown and caramelized (about 30-40 minutes).
- Stir in balsamic vinegar and thyme. Cook for another minute until the vinegar is absorbed. Remove from heat and set aside.
- Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and arrange on a baking sheet.
- Bake for 5-7 minutes, or until lightly toasted.
- Top each toasted baguette slice with a generous spoonful of caramelized onions and a sprinkle of shredded Gruyère cheese.
- Bake for another 3-5 minutes, or until the cheese is melted and bubbly.
