Ingredients:

  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 baguette, sliced into 1/2-inch thick rounds
  • 2 tablespoons olive oil
  • 4 ounces Gruyère cheese, shredded
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet or Dutch oven over medium-low heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are deeply golden brown and caramelized (about 30-40 minutes).
  2. Stir in balsamic vinegar and thyme. Cook for another minute until the vinegar is absorbed. Remove from heat and set aside.
  3. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and arrange on a baking sheet.
  4. Bake for 5-7 minutes, or until lightly toasted.
  5. Top each toasted baguette slice with a generous spoonful of caramelized onions and a sprinkle of shredded Gruyère cheese.
  6. Bake for another 3-5 minutes, or until the cheese is melted and bubbly.
