Ingredients:
- 2 cups whole milk or half-and-half
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon pure vanilla extract
- 1 large egg yolk
- 6 cups clean, fresh snow (or crushed ice)
- Optional toppings: chocolate syrup, fresh berries, chopped nuts, cinnamon
Instructions:
- In a saucepan, combine milk or half-and-half and sugar over medium heat. Stir occasionally until warm but not boiling.
- In a small bowl, whisk egg yolk with cornstarch until smooth.
- Slowly pour a ladle of warm milk into the egg yolk mixture, whisking constantly to temper the eggs.
- Pour the tempered egg mixture back into the saucepan.
- Cook gently, stirring constantly, until custard thickens and coats the back of a spoon, about 5 minutes.
- Remove from heat and add vanilla extract.
- Pour custard into a chilled bowl, cover with plastic wrap touching the surface, and refrigerate until cool, about 10 minutes.
- Gather clean, fresh, fluffy snow in a clean bowl.
- Add snow gradually to the chilled custard and gently fold until light and creamy using about 6 cups snow or desired amount.
- Scoop snow cream into bowls, garnish with optional toppings like chocolate syrup, berries, or cinnamon, and serve immediately.
