Ingredients:

  • 2 cups whole milk or half-and-half
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon pure vanilla extract
  • 1 large egg yolk
  • 6 cups clean, fresh snow (or crushed ice)
  • Optional toppings: chocolate syrup, fresh berries, chopped nuts, cinnamon

Instructions:

  1. In a saucepan, combine milk or half-and-half and sugar over medium heat. Stir occasionally until warm but not boiling.
  2. In a small bowl, whisk egg yolk with cornstarch until smooth.
  3. Slowly pour a ladle of warm milk into the egg yolk mixture, whisking constantly to temper the eggs.
  4. Pour the tempered egg mixture back into the saucepan.
  5. Cook gently, stirring constantly, until custard thickens and coats the back of a spoon, about 5 minutes.
  6. Remove from heat and add vanilla extract.
  7. Pour custard into a chilled bowl, cover with plastic wrap touching the surface, and refrigerate until cool, about 10 minutes.
  8. Gather clean, fresh, fluffy snow in a clean bowl.
  9. Add snow gradually to the chilled custard and gently fold until light and creamy using about 6 cups snow or desired amount.
  10. Scoop snow cream into bowls, garnish with optional toppings like chocolate syrup, berries, or cinnamon, and serve immediately.
