  • 1 tablespoon granulated sugar
  • 1 1/4 cups (300ml) milk
  • 1 large egg, lightly beaten
  • 3 tablespoons (42g) unsalted butter, melted, plus more for greasing the pan

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined. This ensures even distribution of the leavening agent (baking powder).
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Gently fold together until just combined. A few lumps are okay; overmixing leads to tough pancakes.
  4. Heat a lightly oiled non-stick skillet or griddle over medium heat. Test the heat by flicking a few drops of water onto the surface; it should sizzle and evaporate quickly.
  5. Pour 1/4 cup of batter onto the hot skillet for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface. Flip when the bubbles start to pop and the edges look set.
