Ingredients:
- 1 1/2 cups (192g) all-purpose flour, plus more for dusting if needed
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/4 cups (300ml) milk
- 1 large egg, lightly beaten
- 3 tablespoons (42g) unsalted butter, melted, plus more for greasing the pan
Instructions:
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined. This ensures even distribution of the leavening agent (baking powder).
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients. Gently fold together until just combined. A few lumps are okay; overmixing leads to tough pancakes.
- Heat a lightly oiled non-stick skillet or griddle over medium heat. Test the heat by flicking a few drops of water onto the surface; it should sizzle and evaporate quickly.
- Pour 1/4 cup of batter onto the hot skillet for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface. Flip when the bubbles start to pop and the edges look set.
- Serve hot with your favorite toppings!
