Ingredients:
- 1 1/2 cups (192g) all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 large egg
- 1 1/4 cups (300ml) buttermilk
- 3 tablespoons (42g) unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
Instructions:
- Whisk together flour, baking powder, baking soda, salt, and sugar in a large bowl.
- In a separate bowl, whisk together egg, buttermilk, melted butter, and vanilla extract (if using).
- Gently pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay!
- Heat a lightly oiled griddle or large skillet over medium heat. A drop of water should sizzle and evaporate within a few seconds.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and bubbles start to form and pop on the surface. Flip when the edges look set. Enjoy your buttermilk pancakes!
