Ingredients:

  • 1 1/2 cups (192g) all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1 1/4 cups (300ml) buttermilk
  • 3 tablespoons (42g) unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Whisk together flour, baking powder, baking soda, salt, and sugar in a large bowl.
  2. In a separate bowl, whisk together egg, buttermilk, melted butter, and vanilla extract (if using).
  3. Gently pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay!
  4. Heat a lightly oiled griddle or large skillet over medium heat. A drop of water should sizzle and evaporate within a few seconds.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and bubbles start to form and pop on the surface. Flip when the edges look set. Enjoy your buttermilk pancakes!
