Ingredients:
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ¼ cups buttermilk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
- Additional butter or oil for greasing the skillet
Instructions:
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine buttermilk, egg, melted butter, and vanilla extract (if using). Whisk until well blended.
- Pour the wet ingredients into the dry ingredients. Gently mix until just combined. (Do not overmix; a few lumps are okay.)
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes.
- Repeat with remaining batter, adjusting heat as necessary.
- Serve warm with desired toppings.
