Ingredients:

  • 1 cup (125 g) all-purpose flour
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (5 g) baking powder
  • 1/2 teaspoon (2 g) baking soda
  • 1/4 teaspoon (1 g) salt
  • 1 cup (240 ml) buttermilk
  • 1 large egg
  • 2 tablespoons (30 g) unsalted butter, melted
  • 1 teaspoon (5 ml) vanilla extract (optional)
  • Maple syrup
  • Fresh berries
  • Whipped cream
  • Clotted cream

Instructions:

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a medium bowl, whisk together buttermilk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients. Gently fold with a spatula until just combined; do not overmix.
  4. Preheat a non-stick frying pan over medium-low heat and lightly grease with butter or oil.
  5. Ladle about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface (about 2-3 minutes).
  6. Flip the pancakes and cook for another 1-2 minutes, until golden brown. Repeat with remaining batter.
  7. Stack pancakes on a plate, drizzle with syrup, and top with fresh berries or cream as desired.
