Ingredients:

  • 1 lb (450 g) ground beef (preferably 80/20 for flavor)
  • 1/2 cup (75 g) breadcrumbs (preferably plain)
  • 1/4 cup (60 ml) milk
  • 1 large egg
  • 1/4 cup (40 g) taco seasoning (store-bought or homemade)
  • 1/2 cup (75 g) onion, finely chopped
  • 1/2 cup (75 g) bell pepper, diced
  • 1/2 cup (125 g) shredded cheese (cheddar or Mexican blend)
  • 1 cup (240 ml) salsa (your favorite variety)
  • 1/2 cup (50 g) shredded cheese for topping
  • 1/4 cup (15 g) chopped fresh cilantro (optional, for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, taco seasoning, onion, bell pepper, and 1/2 cup cheese.
  3. Mix until well incorporated but do not overmix.
  4. Transfer the mixture to the loaf pan, pressing it down to form an even shape.
  5. Spread the salsa evenly over the top of the meatloaf.
  6. Sprinkle the remaining cheese over the salsa.
  7. Place the loaf pan on a baking sheet and bake for 45 minutes or until the internal temperature reaches 160°F (70°C).
  8. Let the meatloaf rest for 10 minutes.
  9. Garnish with cilantro before slicing and serving.
