Ingredients:
- 1 lb (450 g) ground beef (preferably 80/20 for flavor)
- 1/2 cup (75 g) breadcrumbs (preferably plain)
- 1/4 cup (60 ml) milk
- 1 large egg
- 1/4 cup (40 g) taco seasoning (store-bought or homemade)
- 1/2 cup (75 g) onion, finely chopped
- 1/2 cup (75 g) bell pepper, diced
- 1/2 cup (125 g) shredded cheese (cheddar or Mexican blend)
- 1 cup (240 ml) salsa (your favorite variety)
- 1/2 cup (50 g) shredded cheese for topping
- 1/4 cup (15 g) chopped fresh cilantro (optional, for garnish)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, taco seasoning, onion, bell pepper, and 1/2 cup cheese.
- Mix until well incorporated but do not overmix.
- Transfer the mixture to the loaf pan, pressing it down to form an even shape.
- Spread the salsa evenly over the top of the meatloaf.
- Sprinkle the remaining cheese over the salsa.
- Place the loaf pan on a baking sheet and bake for 45 minutes or until the internal temperature reaches 160°F (70°C).
- Let the meatloaf rest for 10 minutes.
- Garnish with cilantro before slicing and serving.
