Ingredients:
- 1 lb (450g) flat iron steak
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 teaspoon black pepper
- ½ cup (113g) unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- Pinch of salt
Instructions:
- In a bowl, whisk together soy sauce, olive oil, minced garlic, rosemary, and pepper.
- Place the flat iron steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, seal or cover, and refrigerate for 1 hour.
- In a bowl, combine softened butter, minced garlic, parsley, chives, and salt. Mix well until fully incorporated, then set aside.
- Preheat your grill or grill pan over medium-high heat.
- Remove the steak from the marinade and shake off excess. Grill for 5-6 minutes per side for medium-rare, or until a meat thermometer reads 130°F (54°C).
- Remove from grill and let it rest for at least 5 minutes. Top with garlic herb butter just before serving.
