Ingredients:

  • 1 tablespoon olive oil (15ml)
  • 1 medium yellow onion, chopped (about 1 cup / 150g)
  • 1 pound ground beef (450g)
  • 1 packet (1 ounce) taco seasoning (28g) (Low Sodium variety if desired)
  • 1/2 cup water (120ml)
  • 1 (15-ounce) can diced tomatoes, undrained (425g)
  • 8 large flour tortillas (about 10-inch / 25cm diameter)
  • 1 (16-ounce) can refried beans (450g)
  • 2 cups shredded cheddar cheese (about 200g)
  • 1 cup shredded Monterey Jack cheese (about 100g)
  • Optional: Sour cream, salsa, guacamole, chopped green onions, for serving

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Stir in taco seasoning, water, and diced tomatoes. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
  3. Preheat oven to 350°F (175°C). Lightly grease the baking dish.
  4. Spread a thin layer of refried beans on the bottom of the baking dish.
  5. Top with 2 tortillas, overlapping if necessary to cover the bottom.
  6. Spread half of the beef mixture over the tortillas.
  7. Sprinkle with 1/3 of the cheddar cheese and 1/3 of the Monterey Jack cheese.
  8. Repeat layers: tortillas, refried beans, remaining beef mixture, cheddar cheese, Monterey Jack cheese.
  9. Top with remaining tortillas.
  10. Sprinkle with remaining cheddar cheese and Monterey Jack cheese.
  11. Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly, and the pie is heated through.
  12. Let stand for 5-10 minutes before cutting into squares and serving. Garnish with your choice of toppings for your Burrito Pie.
