Ingredients:
- 1 sheet (approx. 14.1 oz / 400 g) Ready-Rolled Puff Pastry
- 4 oz (115 g) Brie Cheese, rind removed, diced into small pieces
- 1/4 cup (60 ml) Whole Berry Cranberry Sauce
- 1 teaspoon (5 ml) Fresh Thyme Leaves, chopped finely
- 1/4 teaspoon (1 g) Sea Salt Flakes
- Pinch Black Pepper, freshly cracked
- 1 Large Egg, lightly beaten (for egg wash)
- 1 tablespoon (15 ml) Milk or Water (for egg wash)
Instructions:
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Prepare the Filling: In a small bowl, gently combine the diced Brie, cranberry sauce, chopped thyme, salt, and pepper. Do not overmix; maintain the cheese chunks.
- Unroll and Spread: Unroll the puff pastry sheet onto a lightly floured surface. If necessary, gently roll it out slightly to form an even 10x12-inch rectangle.
- Apply Filling: Spread the prepared filling mixture evenly over the entire surface of the pastry, leaving about a 1/2-inch (1 cm) border clear along the longest edge.
- Roll Tightly: Starting from the long edge opposite the clear border, tightly roll the pastry into a log, much like rolling a Swiss roll. Press the final seam firmly to seal.
- Chill (Crucial Step): Wrap the pastry log tightly in cling film. Transfer it to the refrigerator and chill for a minimum of 30 minutes. This step ensures the pastry is firm enough for a clean slice.
- Slice Pinwheels: Once chilled, use a very sharp knife to slice the log into rounds, approximately 1/2-inch (1 cm) thick.
- Arrange: Lay the pinwheels flat on the prepared baking sheet, leaving about 1 inch (2.5 cm) between each one to allow for puffing.
- Apply Egg Wash: Whisk together the egg and milk/water for the egg wash. Brush the tops and sides of each pinwheel generously.
- Bake for 18–20 minutes, or until the pastry is deeply golden brown, puffed up, and the cheese is melted and bubbling slightly.
- Cool and Serve: Remove from the oven and allow them to cool on the tray for 5 minutes before transferring to a serving plate. Serve warm or at room temperature.
