Ingredients:
- 1 lb Lean Ground Beef (90/10)
- 1 medium Yellow Onion, finely diced
- 2 cloves Garlic, minced
- 15 oz Black Beans, rinsed and drained
- 15 oz Kidney Beans, rinsed and drained
- 15 oz Sweet Corn, drained
- 14.5 oz Fire Roasted Diced Tomatoes
- 4 oz Diced Green Chiles
- 1 oz Taco Seasoning
- 1 oz Dry Ranch Dressing Mix
- 2 cups Low Sodium Beef Broth
Instructions:
- Place the ground beef in a large pot over medium high heat.
- Add the diced yellow onion to the beef. Cook 5 minutes until the onion is translucent and the beef is fully browned.
- Toss in the minced garlic and cook for 60 seconds until it becomes fragrant and golden.
- Pour in about 1/4 cup of the beef broth and scrape the bottom of the pot.
- Sprinkle the taco seasoning and ranch mix over the meat and onions, stirring well to coat.
- Pour in the black beans, kidney beans, sweet corn, fire roasted tomatoes, and green chiles.
- Pour the remaining beef broth into the pot and stir to combine all ingredients.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 minutes until the flavors are fully merged and the liquid has slightly thickened.
- If you prefer a thicker soup, crush a few beans against the side of the pot with your spoon.
- Season with a pinch of salt or pepper if needed before serving hot.
