Ingredients:

  • 1 lb Lean Ground Beef (90/10)
  • 1 medium Yellow Onion, finely diced
  • 2 cloves Garlic, minced
  • 15 oz Black Beans, rinsed and drained
  • 15 oz Kidney Beans, rinsed and drained
  • 15 oz Sweet Corn, drained
  • 14.5 oz Fire Roasted Diced Tomatoes
  • 4 oz Diced Green Chiles
  • 1 oz Taco Seasoning
  • 1 oz Dry Ranch Dressing Mix
  • 2 cups Low Sodium Beef Broth

Instructions:

  1. Place the ground beef in a large pot over medium high heat.
  2. Add the diced yellow onion to the beef. Cook 5 minutes until the onion is translucent and the beef is fully browned.
  3. Toss in the minced garlic and cook for 60 seconds until it becomes fragrant and golden.
  4. Pour in about 1/4 cup of the beef broth and scrape the bottom of the pot.
  5. Sprinkle the taco seasoning and ranch mix over the meat and onions, stirring well to coat.
  6. Pour in the black beans, kidney beans, sweet corn, fire roasted tomatoes, and green chiles.
  7. Pour the remaining beef broth into the pot and stir to combine all ingredients.
  8. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 minutes until the flavors are fully merged and the liquid has slightly thickened.
  9. If you prefer a thicker soup, crush a few beans against the side of the pot with your spoon.
  10. Season with a pinch of salt or pepper if needed before serving hot.
