Ingredients:

  • 1 lb fresh organic strawberries, firm with stems intact
  • 8 oz dark chocolate chips (at least 70% cacao)
  • 1 tsp virgin coconut oil
  • 2 tbsp hemp hearts or chia seeds
  • 1 oz white chocolate (optional drizzle)

Instructions:

  1. Wash the strawberries under cold water and pat them individually with paper towels. Lay them out on a clean kitchen towel for at least 30 minutes to ensure they are bone-dry, keeping the green hulls intact.
  2. In a microwave-safe glass bowl, combine the dark chocolate and coconut oil. Heat in 30-second bursts, stirring vigorously between each interval. Alternatively, use a double boiler over barely simmering water until 90% melted, then stir until smooth.
  3. Holding a strawberry by the stem, dip it into the melted chocolate, tilting the bowl to ensure an even coat. Lift and shake off the excess.
  4. While the chocolate is still wet, sprinkle with hemp hearts or chia seeds. If using white chocolate, melt it separately and drizzle over the dark chocolate layer.
  5. Place the strawberries on a baking sheet lined with parchment paper. Refrigerate for approximately 25-30 minutes until the chocolate has completely set and created a firm snap.
