Ingredients:
- 1.5 lbs flank steak, sliced thin against the grain
- 0.5 cup cornstarch
- 0.5 cup neutral oil
- 0.5 cup low sodium soy sauce
- 0.5 cup water
- 0.75 cup dark brown sugar
- 2 tsp fresh ginger, minced
- 3 cloves garlic, minced
- 2 bunches green onions, cut into 2-inch pieces
- 1 tsp toasted sesame oil
Instructions:
- Slice your 1.5 lbs flank steak into thin strips, roughly 2 inches long.
- Toss the steak strips in 0.5 cup cornstarch in a large bowl.
- Add 0.5 cup neutral oil to your pan over medium high heat until it shimmers and a pinch of flour sizzles instantly.
- Add the beef in batches to avoid crowding. Cook for 2 minutes until the edges are crispy and golden brown.
- Remove the beef to a paper towel lined plate and pour out all but 1 tablespoon of oil.
- Add 2 tsp minced ginger and 3 cloves minced garlic. Cook for 30 seconds until fragrant but not browned.
- Pour in 0.5 cup low sodium soy sauce, 0.5 cup water, and 0.75 cup dark brown sugar.
- Bring the mixture to a boil for 2-3 minutes until the sauce thickens and coats the back of a spoon.
- Return the beef to the pan along with the 2 bunches of green onions.
- Toss for 1 minute to glaze everything, then stir in 1 tsp toasted sesame oil until the aroma fills the room.
