Ingredients:

  • 1.5 lbs flank steak, sliced thin against the grain
  • 0.5 cup cornstarch
  • 0.5 cup neutral oil
  • 0.5 cup low sodium soy sauce
  • 0.5 cup water
  • 0.75 cup dark brown sugar
  • 2 tsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 bunches green onions, cut into 2-inch pieces
  • 1 tsp toasted sesame oil

Instructions:

  1. Slice your 1.5 lbs flank steak into thin strips, roughly 2 inches long.
  2. Toss the steak strips in 0.5 cup cornstarch in a large bowl.
  3. Add 0.5 cup neutral oil to your pan over medium high heat until it shimmers and a pinch of flour sizzles instantly.
  4. Add the beef in batches to avoid crowding. Cook for 2 minutes until the edges are crispy and golden brown.
  5. Remove the beef to a paper towel lined plate and pour out all but 1 tablespoon of oil.
  6. Add 2 tsp minced ginger and 3 cloves minced garlic. Cook for 30 seconds until fragrant but not browned.
  7. Pour in 0.5 cup low sodium soy sauce, 0.5 cup water, and 0.75 cup dark brown sugar.
  8. Bring the mixture to a boil for 2-3 minutes until the sauce thickens and coats the back of a spoon.
  9. Return the beef to the pan along with the 2 bunches of green onions.
  10. Toss for 1 minute to glaze everything, then stir in 1 tsp toasted sesame oil until the aroma fills the room.
