Ingredients:
- 1 lb lean ground beef (80/20)
- 16 oz refried beans
- 1/4 cup water
- 1 tbsp taco seasoning
- 8 small flour tortillas
- 1/2 cup vegetable oil
- 1 cup red enchilada sauce
- 1.5 cups shredded Mexican blend cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 2 tbsp fresh cilantro, chopped
- 2 stalks green onions, sliced
Instructions:
- In a large skillet, brown the ground beef over medium-high heat until fully cooked. Drain excess fat to reduce calorie density and improve texture.
- Stir in the taco seasoning and 1/4 cup of water. Simmer for 5 minutes until the liquid reduces into a thick glaze that coats the beef.
- In a separate clean skillet, heat vegetable oil over medium heat. Fry each tortilla for 30–45 seconds per side until golden brown and bubbly. Drain on paper towels immediately.
- Spread a layer of refried beans onto four of the fried tortillas, then top each with a portion of the seasoned beef. Place a second fried tortilla on top of the beef layer.
- Spread enchilada sauce over the top tortilla. Sprinkle generously with shredded cheese, diced tomatoes, and sliced olives.
- Broil in the oven for 2-3 minutes or until the cheese is melted and bubbling. Garnish with fresh cilantro and green onions before serving.
