Ingredients:

  • 1 lb lean ground beef (80/20)
  • 16 oz refried beans
  • 1/4 cup water
  • 1 tbsp taco seasoning
  • 8 small flour tortillas
  • 1/2 cup vegetable oil
  • 1 cup red enchilada sauce
  • 1.5 cups shredded Mexican blend cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 2 tbsp fresh cilantro, chopped
  • 2 stalks green onions, sliced

Instructions:

  1. In a large skillet, brown the ground beef over medium-high heat until fully cooked. Drain excess fat to reduce calorie density and improve texture.
  2. Stir in the taco seasoning and 1/4 cup of water. Simmer for 5 minutes until the liquid reduces into a thick glaze that coats the beef.
  3. In a separate clean skillet, heat vegetable oil over medium heat. Fry each tortilla for 30–45 seconds per side until golden brown and bubbly. Drain on paper towels immediately.
  4. Spread a layer of refried beans onto four of the fried tortillas, then top each with a portion of the seasoned beef. Place a second fried tortilla on top of the beef layer.
  5. Spread enchilada sauce over the top tortilla. Sprinkle generously with shredded cheese, diced tomatoes, and sliced olives.
  6. Broil in the oven for 2-3 minutes or until the cheese is melted and bubbling. Garnish with fresh cilantro and green onions before serving.
