Ingredients:

  • 1/2 cup (120 ml) fresh lime juice
  • 3 cups (720 ml) chilled lemon-lime soda (e.g., Sprite or 7-Up)
  • 1 cup (240 ml) chilled pineapple juice
  • 3–5 drops green food colouring
  • Ice cubes
  • 1/4 cup (50 g) granulated sugar (for rim)
  • 1 tsp finely grated lime zest (for rim)
  • 4 maraschino cherries (for garnish)
  • 1 tsp maraschino cherry syrup (for garnish)

Instructions:

  1. Prepare the Rim: Combine sugar and lime zest in a shallow dish. Run a lime wedge around the rim of each glass to moisten. Gently dip the moistened rim into the sugar mixture to coat evenly. Set aside.
  2. Create the Green Base: In a cocktail shaker, combine the fresh lime juice, pineapple juice, and green food colouring. Add a few ice cubes and shake vigorously for about 15 seconds until well chilled and fully incorporated.
  3. Assemble the Mocktails: Fill the prepared glasses with fresh ice. Pour the chilled green juice mixture evenly into the four glasses, filling them about one-third full.
  4. Top and Finish: Top each glass slowly with the chilled lemon-lime soda, allowing the fizz to integrate naturally. Drizzle a few drops of reserved maraschino cherry syrup over the top of each drink for a visual 'heart' effect. Garnish each glass with one maraschino cherry.
