Ingredients:

  • 1 lb lean ground beef (90/10)
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 24 oz high-quality marinara sauce
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes
  • 24 oz frozen cheese tortellini (do not thaw)
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup beef broth
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). In a large skillet over medium-high heat, brown the ground beef with diced onions until beef is thoroughly cooked and onions are translucent.
  2. Add minced garlic and Italian seasoning to the skillet. Cook for 1 minute until fragrant. Stir in the marinara sauce and beef broth, bringing the mixture to a gentle simmer.
  3. Spread a thin layer of the meat sauce onto the bottom of a 9x13 inch baking dish. Arrange the frozen tortellini in an even layer over the sauce.
  4. Pour the remaining meat sauce over the tortellini, ensuring all pasta is submerged or well-coated. Sprinkle 1 cup of mozzarella and the Parmesan cheese over the top.
  5. Cover the dish tightly with aluminum foil and bake for 20 minutes. Remove the foil, sprinkle the remaining 1 cup of mozzarella cheese over the top.
  6. Bake uncovered for another 10–15 minutes until the cheese is melted and bubbly. Optional: Broil for 2 minutes for a golden finish. Let rest for 5 minutes and garnish with fresh parsley before serving.
