Ingredients:
- 1 lb lean ground beef (90/10)
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 24 oz high-quality marinara sauce
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes
- 24 oz frozen cheese tortellini (do not thaw)
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup beef broth
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions:
- Preheat oven to 375°F (190°C). In a large skillet over medium-high heat, brown the ground beef with diced onions until beef is thoroughly cooked and onions are translucent.
- Add minced garlic and Italian seasoning to the skillet. Cook for 1 minute until fragrant. Stir in the marinara sauce and beef broth, bringing the mixture to a gentle simmer.
- Spread a thin layer of the meat sauce onto the bottom of a 9x13 inch baking dish. Arrange the frozen tortellini in an even layer over the sauce.
- Pour the remaining meat sauce over the tortellini, ensuring all pasta is submerged or well-coated. Sprinkle 1 cup of mozzarella and the Parmesan cheese over the top.
- Cover the dish tightly with aluminum foil and bake for 20 minutes. Remove the foil, sprinkle the remaining 1 cup of mozzarella cheese over the top.
- Bake uncovered for another 10–15 minutes until the cheese is melted and bubbly. Optional: Broil for 2 minutes for a golden finish. Let rest for 5 minutes and garnish with fresh parsley before serving.
