Ingredients:

  • 1 bag (14 ounces) Nacho Cheese Doritos, party size
  • 1½-2 pounds ground beef
  • 1 can (10¾ ounces) cheddar cheese soup
  • 1 can (10¾ ounces) cream of chicken soup
  • 1 can (12 ounces) evaporated milk
  • 1 can (4 ounces) diced green chilies
  • 2-3 cups shredded Mexican cheese blend
  • 1 packet taco seasoning (optional)
  • Sour cream
  • Diced green onions
  • Sliced cherry tomatoes
  • Sliced avocado or guacamole
  • Salsa

Instructions:

  1. Preheat your oven to 350°F (175°C). Spray the casserole dish with non-stick cooking spray.
  2. In a skillet over medium-high heat, brown the ground beef while breaking it apart with a spoon. Drain excess fat. If using taco seasoning, add now and mix well.
  3. Add cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies to the cooked beef. Stir well until heated through and gently bubbling.
  4. Spread half of the Doritos across the bottom of the casserole dish, lightly crushing but keeping larger pieces for texture.
  5. Spoon half of the meat and cheese sauce evenly over the Doritos. Top with 1 cup of shredded cheese.
  6. Add the remaining Doritos, then cover with the rest of the meat mixture. Finish with the remaining shredded cheese.
  7. Bake in the oven for about 20 minutes until cheese is melted and bubbly, with golden edges.
  8. Let the casserole rest for 5 minutes before slicing. Serve hot with optional toppings.
