Ingredients:
- 1 bag (14 ounces) Nacho Cheese Doritos, party size
- 1½-2 pounds ground beef
- 1 can (10¾ ounces) cheddar cheese soup
- 1 can (10¾ ounces) cream of chicken soup
- 1 can (12 ounces) evaporated milk
- 1 can (4 ounces) diced green chilies
- 2-3 cups shredded Mexican cheese blend
- 1 packet taco seasoning (optional)
- Sour cream
- Diced green onions
- Sliced cherry tomatoes
- Sliced avocado or guacamole
- Salsa
Instructions:
- Preheat your oven to 350°F (175°C). Spray the casserole dish with non-stick cooking spray.
- In a skillet over medium-high heat, brown the ground beef while breaking it apart with a spoon. Drain excess fat. If using taco seasoning, add now and mix well.
- Add cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies to the cooked beef. Stir well until heated through and gently bubbling.
- Spread half of the Doritos across the bottom of the casserole dish, lightly crushing but keeping larger pieces for texture.
- Spoon half of the meat and cheese sauce evenly over the Doritos. Top with 1 cup of shredded cheese.
- Add the remaining Doritos, then cover with the rest of the meat mixture. Finish with the remaining shredded cheese.
- Bake in the oven for about 20 minutes until cheese is melted and bubbly, with golden edges.
- Let the casserole rest for 5 minutes before slicing. Serve hot with optional toppings.
