Ingredients:

  • 2 lbs russet potatoes, scrubbed and cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (whole or 2%)
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ teaspoon chili powder
  • ¼ teaspoon cayenne pepper (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C). Cut the potatoes into uniform fries and soak them in cold water for 30 minutes (optional, helps with crispiness). Drain and pat the potatoes dry.
  2. Toss the fries with olive oil, salt, paprika, garlic powder, onion powder, and black pepper in a mixing bowl. Spread the fries on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  3. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden. Gradually pour in the milk, whisking constantly until thickened (about 5 minutes). Stir in the cheddar cheese, chili powder, and cayenne pepper until the cheese is melted and the sauce is smooth.
  4. Once the fries are baked, serve hot with cheese sauce drizzled over the top or on the side for dipping.
