Ingredients:
- 2 lbs russet potatoes, scrubbed and cut into fries
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk (whole or 2%)
- 1 ½ cups shredded sharp cheddar cheese
- ½ teaspoon chili powder
- ¼ teaspoon cayenne pepper (optional)
Instructions:
- Preheat the oven to 425°F (220°C). Cut the potatoes into uniform fries and soak them in cold water for 30 minutes (optional, helps with crispiness). Drain and pat the potatoes dry.
- Toss the fries with olive oil, salt, paprika, garlic powder, onion powder, and black pepper in a mixing bowl. Spread the fries on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden. Gradually pour in the milk, whisking constantly until thickened (about 5 minutes). Stir in the cheddar cheese, chili powder, and cayenne pepper until the cheese is melted and the sauce is smooth.
- Once the fries are baked, serve hot with cheese sauce drizzled over the top or on the side for dipping.
