Ingredients:

  • 2 ripe avocados, halved and pitted (about 400g)
  • 1 medium tomato, diced (about 150g)
  • 1/4 cup finely chopped red onion (about 40g)
  • 1-2 jalapeños, deseeded and minced (to taste)
  • 1/4 cup fresh cilantro, chopped (about 10g)
  • Juice of 1 lime (about 2 tablespoons or 30ml)
  • Salt, to taste
  • Pepper, to taste

Instructions:

  1. Dice the tomatoes, chop the red onion, and mince the jalapeños. Chop the cilantro and set it aside.
  2. In a mixing bowl, scoop the avocado flesh out of the skins and use a fork or potato masher to mash to your desired consistency (smooth or chunky).
  3. Add diced tomatoes, chopped onion, minced jalapeños, and cilantro to the bowl.
  4. Squeeze the lime juice over the mixture. Sprinkle in salt and pepper to taste. Gently fold until all ingredients are well combined.
  5. Taste the salsa and adjust lime juice, salt, or pepper as needed.
  6. Transfer to a serving dish and serve immediately, or cover and chill for up to 30 minutes to enhance flavors.
