Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup Ranch dressing
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (corn, peas, carrots)
  • 3 cups cooked pasta (e.g., rotini or penne)
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon melted butter

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, Ranch dressing, sour cream, and mixed vegetables.
  3. Add cooked pasta to the mixture and stir until fully combined.
  4. Transfer the mixture into a greased 9x13 inch baking dish.
  5. Sprinkle shredded cheddar cheese evenly over the top of the casserole.
  6. In a separate bowl, combine crushed tortilla chips, grated Parmesan cheese, and melted butter. Mix well.
  7. Spread the chip mixture over the cheese layer in the casserole.
  8. Bake in the preheated oven for about 30-35 minutes until bubbly and golden brown on top.
  9. Remove from the oven and let cool slightly before serving.
