Ingredients:
- 2 cups cooked chicken, shredded
- 1 cup Ranch dressing
- 1 cup sour cream
- 1 cup frozen mixed vegetables (corn, peas, carrots)
- 3 cups cooked pasta (e.g., rotini or penne)
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
- 1/2 cup grated Parmesan cheese
- 1 tablespoon melted butter
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, Ranch dressing, sour cream, and mixed vegetables.
- Add cooked pasta to the mixture and stir until fully combined.
- Transfer the mixture into a greased 9x13 inch baking dish.
- Sprinkle shredded cheddar cheese evenly over the top of the casserole.
- In a separate bowl, combine crushed tortilla chips, grated Parmesan cheese, and melted butter. Mix well.
- Spread the chip mixture over the cheese layer in the casserole.
- Bake in the preheated oven for about 30-35 minutes until bubbly and golden brown on top.
- Remove from the oven and let cool slightly before serving.
