Ingredients:

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • Pinch of salt

Instructions:

  1. Combine sugar and water in a saucepan. Cook over medium heat until the sugar dissolves and turns golden amber. Quickly pour into the baking dish to harden.
  2. In a blender or mixing bowl, combine sweetened condensed milk, evaporated milk, eggs, vanilla extract, and salt. Blend or whisk until smooth.
  3. Preheat the oven to 350°F (175°C). Pour the quesillo mixture over the hardened caramel. Place in a roasting pan, fill with hot water halfway up the dish. Cover with foil and bake for 60 minutes.
  4. Remove from oven; cool in water bath for 30 minutes. Refrigerate for at least 2 hours. To serve, run a knife around edges and invert onto a plate.
