Ingredients:
- 1 cup (225g) unsalted butter, melted
- 2 cups (400g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 1 cup (90g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup (120ml) brewed strong coffee (hot)
- 1 tablespoon instant espresso powder
- 1/2 cup (90g) semi-sweet chocolate chips
- 2 tablespoons sugar
- 1/4 cup (60ml) heavy cream
Instructions:
- Preheat the oven to 350°F (175°C). Grease and line the baking pan with parchment paper for easy removal.
- In a bowl, whisk together melted butter and sugar until combined. Add eggs and vanilla; whisk until smooth. Gradually mix in flour, cocoa powder, salt, and baking powder until just combined.
- In a small saucepan, heat brewed coffee and espresso powder until dissolved. Stir in chocolate chips, sugar, and cream until smooth. Allow to cool slightly.
- Pour half the brownie batter into the prepared pan, spreading evenly. Drizzle half of the mocha mixture on top, then repeat with remaining batter and mocha. Use a knife or toothpick to gently swirl the mixtures together.
- Bake in preheated oven for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack. Cut into squares and serve.
