Ingredients:

  • 1 cup (225g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 cup (90g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup (120ml) brewed strong coffee (hot)
  • 1 tablespoon instant espresso powder
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 2 tablespoons sugar
  • 1/4 cup (60ml) heavy cream

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and line the baking pan with parchment paper for easy removal.
  2. In a bowl, whisk together melted butter and sugar until combined. Add eggs and vanilla; whisk until smooth. Gradually mix in flour, cocoa powder, salt, and baking powder until just combined.
  3. In a small saucepan, heat brewed coffee and espresso powder until dissolved. Stir in chocolate chips, sugar, and cream until smooth. Allow to cool slightly.
  4. Pour half the brownie batter into the prepared pan, spreading evenly. Drizzle half of the mocha mixture on top, then repeat with remaining batter and mocha. Use a knife or toothpick to gently swirl the mixtures together.
  5. Bake in preheated oven for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack. Cut into squares and serve.
