Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup cocoa powder
  • 8 oz cream cheese, softened

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract; blend until combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Spread the base mixture evenly into the prepared baking dish.
  6. In a clean bowl, beat the softened cream cheese and butter until smooth.
  7. Gradually mix in the powdered sugar, then add the eggs one at a time, followed by the vanilla and cocoa powder. Mix until well combined and smooth.
  8. Pour the filling over the base layer in the baking dish, using a spatula to spread evenly.
  9. Bake in the preheated oven for 35–40 minutes, or until the edges look set but the center appears slightly jiggly.
  10. Allow to cool in the pan for at least 30 minutes before slicing into squares. Serve warm or at room temperature.
