Ingredients:
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup cocoa powder
- 8 oz cream cheese, softened
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract; blend until combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Spread the base mixture evenly into the prepared baking dish.
- In a clean bowl, beat the softened cream cheese and butter until smooth.
- Gradually mix in the powdered sugar, then add the eggs one at a time, followed by the vanilla and cocoa powder. Mix until well combined and smooth.
- Pour the filling over the base layer in the baking dish, using a spatula to spread evenly.
- Bake in the preheated oven for 35–40 minutes, or until the edges look set but the center appears slightly jiggly.
- Allow to cool in the pan for at least 30 minutes before slicing into squares. Serve warm or at room temperature.
