Ingredients:

  • 6 large eggs
  • 1/2 cup cottage cheese, full-fat
  • 1/4 cup grated Gruyere cheese
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooked bacon, crumbled (amount to taste)
  • Cooked sausage, crumbled (amount to taste)
  • Spinach, chopped (amount to taste)
  • Roasted red peppers, diced (amount to taste)
  • Mushrooms, sautéed (amount to taste)
  • Cheddar cheese, shredded (amount to taste)
  • Feta cheese, crumbled (amount to taste)

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease your silicone muffin mold (or ramekins). Bring water to a simmer on the stovetop.
  2. In a blender, combine eggs, cottage cheese, Gruyere cheese, heavy cream, salt, and pepper. Blend until completely smooth and creamy.
  3. Evenly distribute your chosen fillings (bacon, spinach, peppers, etc.) into the muffin molds.
  4. Carefully pour the egg mixture over the fillings, filling each mold almost to the top.
  5. Place the muffin mold on a baking sheet. Pour hot water into the baking sheet to create a water bath, reaching halfway up the sides of the muffin mold.
  6. Bake for 25-30 minutes, or until the egg bites are set and lightly golden. A toothpick inserted into the center should come out clean.
  7. Let the egg bites cool slightly in the mold before gently removing them. Serve warm and enjoy your customized creation!
