Ingredients:
- 6 large eggs
- 1/2 cup cottage cheese, full-fat
- 1/4 cup grated Gruyere cheese
- 1/4 cup heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooked bacon, crumbled (amount to taste)
- Cooked sausage, crumbled (amount to taste)
- Spinach, chopped (amount to taste)
- Roasted red peppers, diced (amount to taste)
- Mushrooms, sautéed (amount to taste)
- Cheddar cheese, shredded (amount to taste)
- Feta cheese, crumbled (amount to taste)
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease your silicone muffin mold (or ramekins). Bring water to a simmer on the stovetop.
- In a blender, combine eggs, cottage cheese, Gruyere cheese, heavy cream, salt, and pepper. Blend until completely smooth and creamy.
- Evenly distribute your chosen fillings (bacon, spinach, peppers, etc.) into the muffin molds.
- Carefully pour the egg mixture over the fillings, filling each mold almost to the top.
- Place the muffin mold on a baking sheet. Pour hot water into the baking sheet to create a water bath, reaching halfway up the sides of the muffin mold.
- Bake for 25-30 minutes, or until the egg bites are set and lightly golden. A toothpick inserted into the center should come out clean.
- Let the egg bites cool slightly in the mold before gently removing them. Serve warm and enjoy your customized creation!
