Ingredients:

  • 2 pounds (900g) sirloin steak (or stew meat), cut into 1-inch (2.5cm) cubes, trimmed of excess fat
  • 3 tablespoons (45ml) olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 teaspoon (6g) salt
  • ½ teaspoon (1g) black pepper
  • 1 teaspoon (2g) onion powder
  • 1 teaspoon (2g) smoked paprika (optional, for added depth)
  • ½ cup (120ml) beef broth, low sodium preferred
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Trim and cube the steak into bite-sized pieces. Ensure even sizes for consistent cooking.
  2. Heat olive oil (or butter) in a large skillet over medium-high heat.
  3. Sear the steak bites in batches, ensuring not to overcrowd the pan, until browned on all sides (approximately 1-2 minutes per side). This locks in flavor.
  4. Place the seared (or unseared) steak bites into the Crock Pot.
  5. In a small bowl, whisk together the minced garlic, Worcestershire sauce, salt, pepper, onion powder, smoked paprika (if using), and beef broth.
  6. Evenly pour the sauce mixture over the steak bites in the Crock Pot.
  7. Cover the Crock Pot.
  8. Cook on LOW for 4-6 hours or on HIGH for 2-3 hours, or until the steak is fork-tender. Check periodically and adjust cooking time as needed.
  9. Garnish with fresh chopped parsley (optional) and serve hot.
