Ingredients:
- 4 large russet potatoes, peeled and sliced thinly
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- 2 cups shredded sharp cheddar cheese
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup chicken or vegetable broth
- 1/2 cup milk
- 1/2 cup crispy bacon bits (optional)
- 1/4 cup chopped green onions for garnish (optional)
Instructions:
- Peel and slice the potatoes thinly. Dice the onion and mince the garlic.
- In a bowl, combine sour cream, cream cheese, cheddar cheese, broth, milk, salt, pepper, and smoked paprika. Whisk until smooth.
- In the crock pot, layer half of the sliced potatoes, followed by half of the onion and garlic mixture. Pour half of the cheese sauce over this layer. Repeat with the remaining potatoes, onion, garlic, and cheese sauce.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until the potatoes are tender.
- If using, sprinkle crispy bacon bits on top and garnish with chopped green onions before serving.
- Stir gently before serving to combine the layers and enjoy!
