Ingredients:
- 2 medium zucchinis (about 400g)
- 1 teaspoon salt (5g)
- 1/2 cup all-purpose flour (60g)
- 1/2 cup crumbled feta cheese (75g)
- 1/4 cup chopped fresh parsley (15g)
- 2 large eggs
- 1 teaspoon baking powder (5g)
- 1/4 teaspoon black pepper (1g)
- 1/4 teaspoon garlic powder (1g)
- 2 tablespoons olive oil (30ml)
Instructions:
- Grate the zucchinis using a grater or food processor. Place them in a bowl and sprinkle with salt. Let sit for 10 minutes to draw out moisture.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
- In a mixing bowl, combine zucchini, flour, feta, parsley, eggs, baking powder, pepper, and garlic powder. Mix until well combined.
- Heat a frying pan over medium heat and add olive oil.
- Drop spoonfuls of the mixture into the pan and flatten gently with a spatula.
- Cook for 3-4 minutes on each side until golden brown and crispy.
- Transfer fritters to a plate lined with paper towels to drain excess oil.
- Serve warm, garnished with a dollop of yogurt or extra feta.
