Instructions:

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly oil it.
  2. In a small bowl, stir together the tomato passata, dried oregano, garlic powder, salt, and pepper to season the sauce.
  3. Lightly brush the cut side of each muffin half with olive oil. Place the halves oil-side down on the lined baking sheet.
  4. Pre-toast the muffin halves by baking them for 3–4 minutes until they are firm and lightly golden. This prevents a soggy bottom.
  5. Remove the tray. Spread a thin, even layer of the seasoned tomato sauce over the pre-toasted surface of each muffin half.
  6. Top generously with mozzarella cheese, followed by any desired meat or vegetable toppings. Finish with a light dusting of grated Parmesan.
  7. Return the pizzas to the oven. Bake for 5–8 minutes, or until the cheese is fully melted, bubbly, and the edges of the muffin crust are golden brown.
  8. Remove from the oven. Garnish immediately with fresh basil leaves if using. Slice carefully and serve hot.
