Ingredients:

  • 2 large yellow onions, thinly sliced
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
  • Oil for frying (vegetable or canola)

Instructions:

  1. Thinly slice the onions using a sharp knife or a mandoline for even thickness.
  2. Place sliced onions in a bowl and cover with buttermilk. Let them soak for 30 minutes.
  3. In a shallow dish, combine flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
  4. In a pot or deep fryer, heat oil to 350°F (175°C). Use a thermometer for accuracy.
  5. Remove onions from buttermilk, allowing excess to drip off. Dip them into the flour mixture, ensuring they are fully coated.
  6. Fry the coated onions in batches until golden brown and crispy, about 2-4 minutes per batch.
  7. Use a slotted spoon to transfer fried onions to a plate lined with paper towels to drain excess oil.
  8. Allow onion chips to cool slightly before enjoying. These can be stored in an airtight container for a few days.
