Ingredients:
- 2 large yellow onions, thinly sliced
- 1 cup all-purpose flour
- ½ cup cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
- Oil for frying (vegetable or canola)
Instructions:
- Thinly slice the onions using a sharp knife or a mandoline for even thickness.
- Place sliced onions in a bowl and cover with buttermilk. Let them soak for 30 minutes.
- In a shallow dish, combine flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
- In a pot or deep fryer, heat oil to 350°F (175°C). Use a thermometer for accuracy.
- Remove onions from buttermilk, allowing excess to drip off. Dip them into the flour mixture, ensuring they are fully coated.
- Fry the coated onions in batches until golden brown and crispy, about 2-4 minutes per batch.
- Use a slotted spoon to transfer fried onions to a plate lined with paper towels to drain excess oil.
- Allow onion chips to cool slightly before enjoying. These can be stored in an airtight container for a few days.
