Ingredients:

  • 3 cups old-fashioned rolled oats (270g)
  • 1 cup nuts, chopped (almonds, walnuts, or pecans) (120g)
  • 1/2 cup seeds (pumpkin seeds or sunflower seeds) (85g)
  • 1/2 cup honey or maple syrup (170g)
  • 1/4 cup unsweetened coconut oil, melted (60ml)
  • 1 tsp vanilla extract (5ml)
  • 1/2 tsp salt (3g)
  • 1 cup dried fruits (raisins, cranberries, or apricots), chopped (140g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, chopped nuts, and seeds.
  3. In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, vanilla extract, and salt.
  4. Pour the wet mixture over the dry ingredients and mix until everything is well-coated.
  5. Spread the granola mixture evenly onto a parchment-lined baking sheet.
  6. Bake in the preheated oven for 25-30 minutes, stirring halfway through, until golden brown.
  7. Remove from oven and let cool for about 10 minutes.
  8. Stir in dried fruits once the granola has cooled slightly.
  9. Transfer to a storage container once completely cool.
