Ingredients:
- 3 cups old-fashioned rolled oats (270g)
- 1 cup nuts, chopped (almonds, walnuts, or pecans) (120g)
- 1/2 cup seeds (pumpkin seeds or sunflower seeds) (85g)
- 1/2 cup honey or maple syrup (170g)
- 1/4 cup unsweetened coconut oil, melted (60ml)
- 1 tsp vanilla extract (5ml)
- 1/2 tsp salt (3g)
- 1 cup dried fruits (raisins, cranberries, or apricots), chopped (140g)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, chopped nuts, and seeds.
- In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, vanilla extract, and salt.
- Pour the wet mixture over the dry ingredients and mix until everything is well-coated.
- Spread the granola mixture evenly onto a parchment-lined baking sheet.
- Bake in the preheated oven for 25-30 minutes, stirring halfway through, until golden brown.
- Remove from oven and let cool for about 10 minutes.
- Stir in dried fruits once the granola has cooled slightly.
- Transfer to a storage container once completely cool.
