Ingredients:

  • 1 lb (454g) Lump Crab Meat, drained well
  • 1 cup (100g) Breadcrumbs (plain, unseasoned)
  • 2 Large Eggs, beaten
  • 1/4 cup (60ml) Mayonnaise
  • 2 Green Onions, finely chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika (smoked paprika is great too!)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup (60g) All-Purpose Flour
  • 2 cups (473ml) Vegetable Oil (for frying)

Instructions:

  1. Heat vegetable oil in a frying pan or Dutch oven over medium-high heat to 350°F (175°C).
  2. In a large bowl, gently combine crab meat, breadcrumbs, eggs, mayonnaise, green onions, garlic powder, paprika, salt, and pepper. Be careful not to overmix the crab.
  3. Place flour in a shallow dish.
  4. Gently form the crab mixture into bite-sized balls or small patties.
  5. Lightly roll each crab bite in flour, ensuring even coating.
  6. Fry crab bites in batches, about 2-3 minutes per side, until golden brown and crispy. Watch them carefully, they brown quickly!
  7. Remove crab bites from oil with a slotted spoon and drain on paper towels. Sprinkle lightly with extra salt immediately.
  8. Serve warm with your favourite dipping sauce.
