Ingredients:
- 1 large head cauliflower
- 2 tablespoons olive oil (plus extra for brushing)
- Salt, to taste
- Black pepper, to taste
- ½ cup (50g) shredded cheddar cheese (or your favorite melting cheese, like Monterey Jack)
- ¼ cup (25g) grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika (optional)
- Fresh parsley or chives, chopped (for garnish)
Instructions:
- Preheat oven to 425°F (220°C). Line baking sheet with parchment paper or grease lightly.
- Remove leaves and trim stem of cauliflower, keeping core intact.
- Stand cauliflower upright and slice into two ¾-inch thick steaks. Save any loose florets for roasting.
- Brush both sides of each steak with olive oil. Sprinkle evenly with salt, pepper, garlic powder, and smoked paprika.
- Place steaks on baking sheet. Roast for 15 minutes.
- Remove from oven. Sprinkle cheddar and Parmesan over each steak.
- Return to oven and roast for 8-10 minutes, or until cheese is melted, bubbly, and golden.
- Garnish with parsley or chives. Serve immediately.
