Ingredients:

  • 1 large head cauliflower
  • 2 tablespoons olive oil (plus extra for brushing)
  • Salt, to taste
  • Black pepper, to taste
  • ½ cup (50g) shredded cheddar cheese (or your favorite melting cheese, like Monterey Jack)
  • ¼ cup (25g) grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional)
  • Fresh parsley or chives, chopped (for garnish)

Instructions:

  1. Preheat oven to 425°F (220°C). Line baking sheet with parchment paper or grease lightly.
  2. Remove leaves and trim stem of cauliflower, keeping core intact.
  3. Stand cauliflower upright and slice into two ¾-inch thick steaks. Save any loose florets for roasting.
  4. Brush both sides of each steak with olive oil. Sprinkle evenly with salt, pepper, garlic powder, and smoked paprika.
  5. Place steaks on baking sheet. Roast for 15 minutes.
  6. Remove from oven. Sprinkle cheddar and Parmesan over each steak.
  7. Return to oven and roast for 8-10 minutes, or until cheese is melted, bubbly, and golden.
  8. Garnish with parsley or chives. Serve immediately.
