Ingredients:
- 3 Large Eggs
- 1 cup Whole Milk
- 2 tbsp Granulated Sugar
- 1 tsp Pure Vanilla Extract
- 1 tsp Ground Cinnamon
- 0.25 tsp Nutmeg
- 0.125 tsp Kosher salt
- 8 slices (1 inch thick) Brioche
- 2 tbsp Unsalted Butter
- 1 tsp Grapeseed oil
Instructions:
- In a shallow wide bowl, whisk the eggs vigorously before adding the milk to prevent white streaks. Gradually whisk in the milk, sugar, vanilla, cinnamon, and salt until the mixture is a uniform, pale tan color.
- Place two slices of bread into the custard base. Allow them to soak for about 20-30 seconds per side until heavy but structurally sound.
- Heat a large non-stick or cast-iron skillet over medium heat. Add 1 tbsp Unsalted Butter and 0.5 tsp Grapeseed oil.
- Once the butter is foaming, add the soaked bread slices. Cook for 3-4 minutes per side until the exterior reaches a deep golden caramelization and the custard center is set. Repeat with the remaining 1 tbsp Unsalted Butter, 0.5 tsp Grapeseed oil, and bread slices.
