Ingredients:

  • 12 oz (340 g) spaghetti or your pasta of choice (dry)
  • 2 tablespoons olive oil (30 ml)
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (50 g) grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups (100 g) potato chips or crisps (ready salted or cheese-flavored)
  • 1/4 cup (15 g) fresh parsley, finely chopped (for garnish)

Instructions:

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup (120 ml) of pasta cooking water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and diced onion; sauté until onions are translucent. Add diced bell pepper and cook until slightly softened.
  3. Lower the heat, pour in the heavy cream and stir together. Add grated Parmesan cheese, and season with salt, pepper, and red pepper flakes if using. Mix in the drained pasta, using reserved cooking water to adjust the sauce consistency as needed.
  4. Crush the potato chips slightly in the packet or using a rolling pin to create bite-sized pieces.
  5. Transfer the pasta to a serving bowl, sprinkle the crushed chips on top, and garnish with parsley.
