Ingredients:

  • 1 lb (454g) ground beef (80/20 blend recommended)
  • ½ small yellow onion, finely chopped (approx. ½ cup)
  • 2 cloves garlic, minced (approx. 1 teaspoon)
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • ½ cup (57g) shredded cheddar cheese
  • 12 small corn tortillas (6-inch diameter)
  • Oil for frying (vegetable, canola, or peanut oil), or cooking spray

Instructions:

  1. Brown ground beef in a skillet over medium heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add chopped onion and minced garlic to the skillet and cook until softened, about 2-3 minutes.
  3. Stir in chili powder, cumin, smoked paprika (if using), salt, and pepper. Cook for another 1-2 minutes to bloom the spices.
  4. Remove the skillet from the heat and stir in the shredded cheese until melted and well combined. Let cool slightly.
  5. Wrap tortillas in a damp paper towel and microwave for 30 seconds to soften them. This prevents cracking when rolling. You can also warm them individually in a dry skillet.
  6. Lay a warmed tortilla flat on a clean surface.
  7. Spoon approximately 2 tablespoons of the beef filling along the bottom third of the tortilla.
  8. Tightly roll the tortilla from bottom to top, encasing the filling.
  9. Place the taquito seam-side down on a plate or baking sheet. Secure with a toothpick if needed.
  10. Repeat with the remaining tortillas and filling.
  11. To Fry: Heat ½ inch of oil in a skillet over medium heat until shimmering (around 350°F/175°C). Carefully place taquitos in the hot oil, 2-3 at a time, seam-side down. Fry for 2-3 minutes per side, or until golden brown and crispy. Drain on paper towels.
  12. To Bake: Preheat oven to 425°F (220°C). Place taquitos seam-side down on a lightly greased baking sheet. Spray the tops of the taquitos with cooking spray. Bake for 15-18 minutes, or until golden brown and crispy, flipping halfway through.
  13. To Air Fry: Place taquitos in the air fryer basket in a single layer, ensuring they are not overcrowded. Spray lightly with cooking spray. Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway through, or until golden brown and crispy.
  14. Serve the hot taquitos immediately with your favorite toppings and sides.
