Ingredients:

  • 2 medium zucchini (approximately 500g), ends trimmed
  • 1 teaspoon kosher salt (5g)
  • 1/2 cup all-purpose flour (60g)
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs (100g)
  • 1/2 cup grated Parmesan cheese (50g), freshly grated is best
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon garlic powder (3g)
  • 1/2 teaspoon dried oregano (1g)
  • 1/4 teaspoon black pepper (0.5g)

Instructions:

  1. Cut the zucchini into fry-shaped sticks. Toss with salt and place in a colander to drain for 15-20 minutes (to remove excess moisture). Gently pat dry with paper towels.
  2. In three separate shallow dishes, place the flour, beaten eggs, and panko breadcrumbs mixed with Parmesan cheese, olive oil, garlic powder, oregano, and pepper.
  3. Dip each zucchini stick first in the flour, then in the egg, and finally in the panko mixture, pressing gently to adhere.
  4. Place the breaded zucchini sticks in a single layer on a baking sheet lined with parchment paper. Avoid overcrowding.
  5. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  6. Let the fries cool slightly on the baking sheet before serving. This allows them to crisp up further.
