Ingredients:
- 2 medium zucchini (approximately 500g), ends trimmed
- 1 teaspoon kosher salt (5g)
- 1/2 cup all-purpose flour (60g)
- 2 large eggs, lightly beaten
- 1 cup panko breadcrumbs (100g)
- 1/2 cup grated Parmesan cheese (50g), freshly grated is best
- 1 tablespoon olive oil (15ml)
- 1 teaspoon garlic powder (3g)
- 1/2 teaspoon dried oregano (1g)
- 1/4 teaspoon black pepper (0.5g)
Instructions:
- Cut the zucchini into fry-shaped sticks. Toss with salt and place in a colander to drain for 15-20 minutes (to remove excess moisture). Gently pat dry with paper towels.
- In three separate shallow dishes, place the flour, beaten eggs, and panko breadcrumbs mixed with Parmesan cheese, olive oil, garlic powder, oregano, and pepper.
- Dip each zucchini stick first in the flour, then in the egg, and finally in the panko mixture, pressing gently to adhere.
- Place the breaded zucchini sticks in a single layer on a baking sheet lined with parchment paper. Avoid overcrowding.
- Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Let the fries cool slightly on the baking sheet before serving. This allows them to crisp up further.
