Ingredients:

  • 2 large sweet potatoes (about 1.5 lbs / 680g), peeled and cut into ½-inch thick fries
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon smoked paprika (5 ml)
  • ½ teaspoon garlic powder (2.5 ml)
  • ½ teaspoon onion powder (2.5 ml)
  • ½ teaspoon sea salt (2.5 ml), or to taste
  • ¼ teaspoon black pepper (1.25 ml), or to taste
  • 1 tablespoon cornstarch (15 ml)

Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper (optional).
  2. Place the sweet potato fries in a large bowl.
  3. Drizzle with olive oil. Add the smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until the fries are evenly coated.
  4. Sprinkle the cornstarch over the fries and toss again to ensure they are all evenly coated. This will help with crispness.
  5. Spread the fries in a single layer on the prepared baking sheet, making sure they aren't overcrowded. Overcrowding steams the fries instead of bakes them.
  6. Bake for 15 minutes. Flip the fries and bake for another 10-15 minutes, or until golden brown and crispy. Watch them carefully towards the end to prevent burning.
  7. Let the fries cool on the baking sheet for a few minutes before serving. This helps them crisp up further.
