Ingredients:
- 1 lb (450g) sirloin, ribeye, or flank steak, cut into 1-inch (2.5cm) cubes
- 2 tablespoons (30ml) cornstarch
- 1 tablespoon (15ml) vegetable oil, for searing
- 2 tablespoons (30ml) soy sauce
- 1 tablespoon (15ml) oyster sauce
- 1 tablespoon (15ml) sesame oil
- 1 tablespoon (15ml) rice vinegar
- 1 tablespoon (15g) brown sugar
- 3 cloves garlic, minced
- 1 teaspoon (5g) fresh ginger, grated
- 1 teaspoon (2g) red pepper flakes (optional)
- Black pepper, to taste
- 1 tablespoon sesame seeds
- 2 green onions, thinly sliced
- 2 limes, cut into wedges
Instructions:
- In a bowl, whisk together all marinade ingredients. Add steak cubes, toss to coat, and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- Remove steak from marinade and pat dry with paper towels. This is crucial for a good sear!
- Lightly dust the steak cubes with cornstarch, ensuring each piece is evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering.
- Sear steak bites in a single layer (don't overcrowd the pan!) for 1-2 minutes per side, until browned and crispy on the outside, and juicy on the inside.
- Transfer to a serving plate. Sprinkle with sesame seeds and green onions. Serve hot with lime wedges.
