Ingredients:
- 1 pound (450g) fresh okra, washed and trimmed
- 1 large egg, lightly beaten
- 1/2 cup (60g) all-purpose flour
- 1/2 cup (50g) cornmeal (preferably fine ground)
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil, divided
Instructions:
- Wash and thoroughly dry the okra. Trim the stems, leaving the cap intact. Cut larger okra pods in half lengthwise.
- In separate shallow bowls, place the flour, the egg, and the cornmeal mixed with Cajun seasoning, garlic powder, salt, and pepper.
- Dredge each okra piece in the flour, then dip in the beaten egg, and finally coat evenly in the cornmeal mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C).
- Lightly brush the air fryer basket with 1 tablespoon of vegetable oil. Arrange the breaded okra in a single layer in the air fryer basket, being careful not to overcrowd. Work in batches if necessary. Drizzle the remaining 1 tablespoon of vegetable oil over the okra.
- Air fry for 12-15 minutes, flipping halfway through, until the okra is golden brown and crispy.
- Remove the okra from the air fryer and serve immediately.
