Ingredients:

  • 1 pound (450g) fresh okra, washed and trimmed
  • 1 large egg, lightly beaten
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (50g) cornmeal (preferably fine ground)
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil, divided

Instructions:

  1. Wash and thoroughly dry the okra. Trim the stems, leaving the cap intact. Cut larger okra pods in half lengthwise.
  2. In separate shallow bowls, place the flour, the egg, and the cornmeal mixed with Cajun seasoning, garlic powder, salt, and pepper.
  3. Dredge each okra piece in the flour, then dip in the beaten egg, and finally coat evenly in the cornmeal mixture, pressing gently to adhere.
  4. Preheat the air fryer to 400°F (200°C).
  5. Lightly brush the air fryer basket with 1 tablespoon of vegetable oil. Arrange the breaded okra in a single layer in the air fryer basket, being careful not to overcrowd. Work in batches if necessary. Drizzle the remaining 1 tablespoon of vegetable oil over the okra.
  6. Air fry for 12-15 minutes, flipping halfway through, until the okra is golden brown and crispy.
  7. Remove the okra from the air fryer and serve immediately.
