Ingredients:
- 4 boneless, skinless chicken breasts (about 1-1.5 lbs or 450-680g)
- 1 cup (100g) all-purpose flour
- 2 large eggs
- 1 cup (100g) breadcrumbs (preferably Italian-seasoned)
- ½ cup (50g) grated Parmesan cheese
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1½ cups (360ml) marinara sauce
- 1½ cups (180g) shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions:
- Preheat the air fryer to 380°F (193°C). Place chicken breasts between plastic wrap and pound to even thickness.
- In one bowl, place flour seasoned with salt and pepper. In a second bowl, whisk the eggs. In a third bowl, combine breadcrumbs, Parmesan cheese, and oregano.
- Dredge each chicken breast in flour, dip into egg, and coat with breadcrumb mixture.
- Place breaded chicken on a parchment-lined tray and chill for 30 minutes.
- Spray the air fryer basket with oil. Place chicken in a single layer in the basket and air fry for 15-20 minutes, flipping halfway until golden brown and cooked through (internal temperature of 165°F/74°C).
- In a baking dish, spread marinara sauce, place the chicken on top, and cover with remaining sauce and mozzarella cheese.
- Return to the air fryer and cook for an additional 5 minutes until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
