Ingredients:
- 1 tablespoon olive oil or butter
- 1 lb smoked sausage, sliced
- 2 lbs potatoes, peeled and cubed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (10.5 oz) can cream of mushroom soup
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Salt to taste
- Fresh parsley or green onions, for garnish
Instructions:
- Heat oil/butter in skillet over medium-high heat. Sauté sausage until browned. Drain excess fat (optional).
- Place potatoes, onion, garlic, and sausage (if sautéed) into the crockpot.
- In a bowl, whisk together cream of mushroom soup, chicken broth, sour cream, shredded cheddar cheese, paprika (if using), pepper, and salt.
- Pour the soup mixture over the potatoes and sausage in the crockpot. Stir gently to combine.
- Cover and cook on LOW for 6-7 hours OR on HIGH for 3-4 hours. Potatoes should be easily pierced with a fork.
- Stir before serving. Garnish with chopped parsley or green onions, if desired.
