Ingredients:

  • 1 tablespoon olive oil or butter
  • 1 lb smoked sausage, sliced
  • 2 lbs potatoes, peeled and cubed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • Fresh parsley or green onions, for garnish

Instructions:

  1. Heat oil/butter in skillet over medium-high heat. Sauté sausage until browned. Drain excess fat (optional).
  2. Place potatoes, onion, garlic, and sausage (if sautéed) into the crockpot.
  3. In a bowl, whisk together cream of mushroom soup, chicken broth, sour cream, shredded cheddar cheese, paprika (if using), pepper, and salt.
  4. Pour the soup mixture over the potatoes and sausage in the crockpot. Stir gently to combine.
  5. Cover and cook on LOW for 6-7 hours OR on HIGH for 3-4 hours. Potatoes should be easily pierced with a fork.
  6. Stir before serving. Garnish with chopped parsley or green onions, if desired.
