Ingredients:

  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 2 cups shredded sharp cheddar cheese
  • 2 cups cooked ham, diced
  • Salt and pepper, to taste
  • 1 tsp smoked paprika (optional)

Instructions:

  1. Wash and thinly slice the Yukon Gold potatoes.
  2. Slice the onion finely.
  3. In a mixing bowl, combine milk, heavy cream, minced garlic, thyme, salt, and pepper. Whisk together.
  4. In the slow cooker, layer half of the sliced potatoes evenly.
  5. Add half of the onion, followed by half of the diced ham.
  6. Pour one-third of the cream mixture over the first layer.
  7. Repeat layering with the remaining potatoes, onions, ham, and another third of the cream mixture.
  8. Finish with the last of the cream mixture and top with shredded cheese.
  9. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender and the cheese is golden and bubbly.
  10. Allow cooling slightly before serving. Enjoy!
