Ingredients:
- 1 package (14.1 ounces) refrigerated pie crusts, thawed
- 8 ounces Brie cheese, rind removed, cut into small cubes
- 1/2 cup whole berry cranberry sauce
- 1/4 cup chopped pecans or walnuts (optional)
- 1 large egg
- 1 tablespoon milk or water
Instructions:
- Unroll pie crusts on a lightly floured surface. Cut out circles using a 2 ½-inch round cookie cutter (or cut into squares). Re-roll scraps. Place the cut pastry rounds onto a baking sheet lined with parchment paper. Chill for 15 minutes.
- Preheat oven to 375°F (190°C). In a small bowl, whisk together the egg and milk (egg wash).
- Place a small cube of brie cheese onto the center of each pastry round. Top with a spoonful of cranberry sauce, and sprinkle with nuts (if using).
- Brush the pastry edges with egg wash.
- Bake for 15-20 minutes, or until golden brown and the brie is melted.
- Let the Cranberry Brie Bites cool on the baking sheet for a few minutes before transferring to a serving platter. Serve warm.
