  • ½ cup small-curd cottage cheese (2% or 4%)
  • ¾ cup unsweetened almond milk (or milk of choice)
  • ½ large frozen banana, sliced
  • 1 large handful fresh baby spinach
  • 1 teaspoon maple syrup or honey (optional)
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon fresh lemon zest (optional)
  • 1 tablespoon chia seeds or flax seeds (optional)

Instructions:

  1. Pour the ¾ cup of milk into the blender jug first. This prevents the blades from getting jammed.
  2. Add the cottage cheese, spinach, vanilla extract, lemon zest, and maple syrup (if using) on top of the liquid.
  3. Add the frozen banana slices, frozen blueberries, and any optional seeds.
  4. Secure the lid firmly. Start blending on a low speed, gradually increasing to high speed. Use the tamper to push ingredients down toward the blades.
  5. Blend until completely smooth, ensuring no chunks of cottage cheese or spinach remain visible (about 45-60 seconds on high).
  6. If the smoothie is too thick, add liquid, 1 tablespoon at a time, blending briefly after each addition until the desired pourable consistency is achieved.
