Ingredients:
- 2 lbs sweet potatoes (Garnet or Jewel), cut into 1-inch cubes
- 2 tbsp avocado oil or grapeseed oil
- 1 tsp fine sea salt
- 1/2 tsp freshly cracked black pepper
- 1/2 tsp smoked paprika
Instructions:
- Preheat oven. Set your oven to 425°F (220°C).
- Prep potatoes. Scrub 2 lbs sweet potatoes and pat them completely dry.
- Cube potatoes. Cut them into 1 inch cubes. Check that they are uniform so they cook at the same rate.
- Mix seasonings. In a large bowl, whisk 2 tbsp avocado oil, 1 tsp salt, 1/2 tsp pepper, and 1/2 tsp smoked paprika.
- Coat thoroughly. Toss the cubes in the oil mixture until every surface is glistening.
- Arrange tray. Spread the potatoes on a large baking sheet. Leave space between every single cube.
- Start roasting. Slide the tray into the center rack for 15 minutes.
- Flip cubes. Use a spatula to turn the potatoes until you see golden brown spots on the bottom.
- Final blast. Roast for another 10 to 15 minutes until edges are dark brown and crispy.
- Rest briefly. Let them sit on the tray for 2 minutes before serving.
