Ingredients:

  • 2 lbs sweet potatoes (Garnet or Jewel), cut into 1-inch cubes
  • 2 tbsp avocado oil or grapeseed oil
  • 1 tsp fine sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp smoked paprika

Instructions:

  1. Preheat oven. Set your oven to 425°F (220°C).
  2. Prep potatoes. Scrub 2 lbs sweet potatoes and pat them completely dry.
  3. Cube potatoes. Cut them into 1 inch cubes. Check that they are uniform so they cook at the same rate.
  4. Mix seasonings. In a large bowl, whisk 2 tbsp avocado oil, 1 tsp salt, 1/2 tsp pepper, and 1/2 tsp smoked paprika.
  5. Coat thoroughly. Toss the cubes in the oil mixture until every surface is glistening.
  6. Arrange tray. Spread the potatoes on a large baking sheet. Leave space between every single cube.
  7. Start roasting. Slide the tray into the center rack for 15 minutes.
  8. Flip cubes. Use a spatula to turn the potatoes until you see golden brown spots on the bottom.
  9. Final blast. Roast for another 10 to 15 minutes until edges are dark brown and crispy.
  10. Rest briefly. Let them sit on the tray for 2 minutes before serving.
