Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 lb crab meat (substitute with imitation crab)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 4 cups seafood stock (substitute with vegetable broth)
  • 1 cup heavy cream (substitute with coconut milk)
  • 2 tablespoons tomato paste
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste

Instructions:

  1. Stir in the tomato paste and Old Bay seasoning; cook for another 2 minutes.
  2. Pour in the seafood stock (vegetable broth) and bring to a simmer.
  3. Add the shrimp and imitation crab meat to the pot; cook until the shrimp turn pink.
  4. Reduce heat to low and stir in the coconut milk; allow it to warm through without boiling.
  5. Season with salt and pepper to taste before serving hot.
