Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 lb crab meat (substitute with imitation crab)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 4 cups seafood stock (substitute with vegetable broth)
- 1 cup heavy cream (substitute with coconut milk)
- 2 tablespoons tomato paste
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
Instructions:
- Stir in the tomato paste and Old Bay seasoning; cook for another 2 minutes.
- Pour in the seafood stock (vegetable broth) and bring to a simmer.
- Add the shrimp and imitation crab meat to the pot; cook until the shrimp turn pink.
- Reduce heat to low and stir in the coconut milk; allow it to warm through without boiling.
- Season with salt and pepper to taste before serving hot.
