Ingredients:

  • 1 pound ground beef or lamb
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups beef broth (or vegetable broth)
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Optional: fresh thyme or rosemary for garnish
  • Instant mashed potatoes (for convenience)
  • Potatoes (about two large ones), peeled and cubed
  • Salt to taste
  • Butter (2 tablespoons)
  • Milk (1/4 cup)

Instructions:

  1. In a large pot over medium heat, brown the ground beef or lamb until fully cooked. Drain excess fat if necessary.
  2. Add diced onions, garlic, carrots, and celery to the pot with the meat. Sauté until vegetables are tender—about five minutes.
  3. Stir in beef broth, tomato paste, Worcestershire sauce, salt, and pepper. Bring to a boil then reduce heat to simmer for about ten minutes.
