Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk (whole or buttermilk)
  • 1/2 cup vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract
  • Optional toppings: Fresh fruits, whipped cream, maple syrup, chocolate chips or nuts

Instructions:

  1. Preheat your waffle iron according to the manufacturers instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs and then add milk, vegetable oil (or melted butter), and vanilla extract. Mix until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix—small lumps are okay!
  5. Lightly grease your preheated waffle iron with cooking spray or brush with oil. Pour an appropriate amount of batter onto the center of your waffle iron (about 1 cup depending on size). Close the lid and cook according to your waffle irons instructions until golden brown.
